Cat Island, to some, is the most "Bahamian" of the out Islands. Even most native Bahamians have never been there, and it is certainly off the tourist map.  There is very little development there, which is currently changing with a few projects. It is considered one of the most beautiful and fertile islands in the Bahamas. Cat Island is extremely fertile and residents make a living from the traditional slash-and-burn farming method. Cascarilla bark is gathered and shipped to Italy where it becomes a main ingredient in medicines, scents and the Italian aperitif called Campari.
